Heat olive oil in a large sauté pan with a lid over medium-high heat. Add Artisola Organic Cheese Tortellini in a single layer and cook until the one side is browned underneath. About 2-4 minutes.
Add the frozen peas and water, and cover with lid. Let the tortellini steam for 5 minutes or until the water is evaporated.
Remove pan from heat. Season with salt & pepper.
Divide the tortellini and pea mixture evenly into 2 bowls. then dollop a spoon full of crème fraiche on each bowl. Squeeze lemon juice over each bowl evenly. then sprinkle top with parmesan cheese, mint, and prosciutto.
