Charred Cauliflower Cheese Tortellini Lemon Tahini Dressing

Ingredients:

6 cups
cauliflower, cut into 2" bits
2 tbsp
olive oil
1 clove
garlic, minced
1 tbsp
thyme, fresh chopped
1 pint
cherry tomatoes, halved
2 cups
cucumber, peeled, seeded and quartered
1/4 cup
red onion, diced
1/4 cup
parsley
For the Dressing:
2 tbsp
tahini paste
1/4 cup
lemon juice
2 tbsp
water
1 clove
garlic, minced
1/4 tsp
cumin, ground
1/4 cup
olive oil
kosher salt and black pepper to taste

Recipe Instructions:

1.
Cook the Artisola Organic Cheese Tortellini according to package directions. Drain well.
2.
Preheat cast iron pan to medium-high heat.
3.
Toss together cauliflower, olive oil, garlic, thyme, salt, and pepper.
4.
Sautee, turning occasionally, for 8 to 12 minutes or until tender and lightly charred.
5.
For the Dressing: Add the tahini paste, lemon juice, water, garlic, and cumin in a bowl and mix well. Then slowly whisk in the Olive oil until incorporated. Season with salt and pepper.
6.
Combine the cooked Organic Cheese Tortellini pasta and cauliflower with the dressing and toss gently.
7.
Stir in tomatoes, cucumbers, onion, and parsley.
8.
Season with salt and pepper to taste. Serve & enjoy!
